This is really perfect for the zucchini lasagna! Try it!
Super easy, but the whole thing does dirty a lot of dishes. Make for special occasions or to impress an omnivore. : )
Tofu ricotta
- 1/2 medium sweet onion
- 1 garlic clove, minced
- 1/2 head broccoli crown
- juice and zest of one lemon
- TBS olive oil
- 1/4 cup nutritional yeast
- 1 package of extra firm tofu
- 10 basil leaves, torn
Saute the onion, garlic and broccoli in a pan with olive oil, salt and pepper for 8-10 minutes.
Combine lemon, tofu, nutritional yeast in food processor.
Add to pan to warm with torn basil leaves.
Enjoy!
I actually like tofu, so I’m going to give this a try!
Wonderful! I didn’t always love tofu, either. Now, I buy 5-7 packages a week 🙂
