I’ve been on a real sushi tear lately and have been stopping by my local grocery store at least a couple times a week to pick up a vegetable roll and, if I’m lucky, my fave – unari.
I was tired tonight, though. I worked late, my boss is in town, just getting over a cold – all the reasons we are all a little tired sometimes.
So, I decided to finally try to make sushi on my own. I was intimidated, but it was so easy!
And the best part of making something you love yourself is you’re free to use all your favorite ingredients, even untraditional ones. ๐
So, I combined sliced cucumber, cherry tomatoes, pepperocinis and red lentils (I don’t love rice.) with hot sauce and voila! Sushi! ๐
I also made a smaller batch of my normal teriyaki sauce. (In case I hated the sushi, to be honest.)
4.5 TBS rice vinegar
ยผ cup tamari
TBS sesame seeds
2 garlic cloves, grated
2 inch piece of fresh ginger, peeled and grated
ยผ tea crushed red pepper
I bought nori a couple of weeks ago, so it worked out nicely. Now, I’m tucked away with a book and my dog on my lap.
