Cchhimmicchurri sauce! Plus, tofu banh mi!

I have some kind of dyslexia in which I can’t spell when there are  double consonants involved. 

But I finally made chummichuri sauce (and I promise I’m not trying to be culturally insensitive. I’ve looked up this word a billion times and it doesn’t stick to my brain.  ðŸ˜¦ )

It was delicious!! And such a good option when you have leftover fresh herbs.  ðŸ™‚

I smiled at dinner tonight. 🙂

Banh mi:

Wheat pita

Baked marinated tofu

Pickled vegetables 

Special sauce

Grilled corn on the cob

Roasted vegetables with chimichurri sauce:

1 bunch farmers’ market cilantro

Handful of spinach, because I forgot to buy parsley…

Couple diced scallions

4 cloves of garlic

Too damn many red pepper flakes

Douse of vinegar (I use apple cider pretty exclusively.)

Juice and zest of 2 lemons and 1 clementine

Blend and add water as needed to make a dousable splash. 


Happy knowing exactly who you are, what you’re good at, and what you’re not so good at. Somebody out there is SO GOOD at double consonants. You got this! 🙂
